Ingredients
- 2 cups of all-purpose flour
- 2 cups of yellow cornmeal
- 1/4 cup of granulated sugar
- 4 teaspoons of baking powder
- 1 teaspoon of salt
- 1/2 cup of vegetable oil
Instructions
- In a large mixing bowl, combine 2 cups of all-purpose flour, 2 cups of yellow cornmeal, 1/4 cup of granulated sugar, 4 teaspoons of baking powder, and 1 teaspoon of salt.
- Mix well until all the dry ingredients are evenly combined.
- Slowly drizzle in 1/2 cup of vegetable oil while continuously mixing the dry ingredients until the mixture resembles coarse crumbs.
- Transfer the cornbread mix to an airtight container or a resealable plastic bag for storage or future use.
- To make cornbread, preheat the oven to 400°F (200°C).
- In a separate bowl, combine 2 1/2 cups of cornbread mix with 1 cup of milk and 2 beaten eggs.
- Stir until just combined, do not overmix.
- Pour the batter into a greased 9x9 inch baking pan.
- Bake for 20-25 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
