Instructions

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a large pot, combine the rinsed rice, chicken broth, ginger, garlic, and salt.
  • Bring the mixture to a boil over high heat, then reduce the heat to low and simmer, partially covered, for 1 hour, stirring occasionally to prevent sticking.
  • After 1 hour, the rice should have broken down and the congee should be creamy. If it's too thick, add more chicken broth to reach your desired consistency.
  • Remove the ginger slices and discard.
  • Serve the congee hot, with an array of toppings for each person to customize their bowl to their liking.
