Ingredients

  • 1 cup of jasmine rice
  • 8 cups of chicken broth
  • 1 inch piece of ginger, peeled and sliced
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • Toppings: sliced green onions, shredded chicken, fried shallots, soy sauce, sesame oil, and/or chili oil

Instructions

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a large pot, combine the rinsed rice, chicken broth, ginger, garlic, and salt.
  • Bring the mixture to a boil over high heat, then reduce the heat to low and simmer, partially covered, for 1 hour, stirring occasionally to prevent sticking.
  • After 1 hour, the rice should have broken down and the congee should be creamy. If it's too thick, add more chicken broth to reach your desired consistency.
  • Remove the ginger slices and discard.
  • Serve the congee hot, with an array of toppings for each person to customize their bowl to their liking.

Chinese

Congee, also known as rice porridge, has a rich history dating back to ancient China. This comforting dish was traditionally consumed as a breakfast staple, but has since become a popular comfort food across Asia. Chefs in regions like Hong Kong, Taiwan, and Thailand have put their own unique spin on congee, incorporating various toppings such as century eggs, pork floss, and crispy dough sticks. Today, the best versions of this dish can be found in bustling street markets and renowned restaurants in cities like Hong Kong and Taipei. The key to a delicious congee lies in the slow cooking process, which allows the rice to break down and create a creamy, flavorful texture. Whether enjoyed as a simple breakfast or a hearty meal, congee continues to be a beloved dish with a timeless appeal.
