Ingredients
- 1 pound of large shrimp, peeled and deveined
- 1/2 cup of coconut milk
- 1/2 cup of shredded coconut
- 1/4 cup of cornstarch
- 1/4 cup of flour
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of vegetable oil
- 1/4 cup of sweet chili sauce
- 2 tablespoons of soy sauce
- 2 tablespoons of lime juice
- 1 tablespoon of honey
- 1 teaspoon of red pepper flakes
- 2 cloves of garlic, minced
- 1 tablespoon of fresh cilantro, chopped
- 1 lime, sliced for garnish
Instructions
- In a shallow dish, mix together 1/4 cup of cornstarch, 1/4 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Dip the shrimp into the coconut milk, then dredge in the cornstarch mixture, and finally coat with shredded coconut.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the shrimp in batches for 2-3 minutes on each side, until golden brown and crispy. Remove and drain on paper towels.
- In a small saucepan, combine 1/4 cup of sweet chili sauce, 2 tablespoons of soy sauce, 2 tablespoons of lime juice, 1 tablespoon of honey, 1 teaspoon of red pepper flakes, and the minced garlic. Simmer for 2-3 minutes, until the sauce thickens slightly.
- Toss the fried shrimp in the spicy chili lime sauce until evenly coated.
- Garnish with chopped cilantro and lime slices before serving.
