Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of shredded coconut
- 1/2 cup of panko breadcrumbs
- 1/2 cup of all-purpose flour
- 2 eggs
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of jasmine rice
- 2 cups of water
- 1/4 cup of chopped fresh cilantro
- 1 lime
- 2 tablespoons of olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a shallow dish, mix together 1 cup of shredded coconut, 1/2 cup of panko breadcrumbs, 1/2 cup of all-purpose flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- In another shallow dish, beat 2 eggs.
- Dip each chicken breast into the beaten eggs, then coat with the coconut mixture, pressing gently to adhere. Place the coated chicken on a baking sheet lined with parchment paper.
- Bake the chicken in the preheated oven for 20-25 minutes, or until golden brown and cooked through.
- While the chicken is baking, prepare the cilantro lime rice. In a medium saucepan, combine 1 cup of jasmine rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
- Fluff the cooked rice with a fork, then stir in the juice of 1 lime and 1/4 cup of chopped fresh cilantro. Season with salt to taste.
