Ingredients
- 1 lb chickpeas, soaked overnight
- 1 lb beef shank
- 1 lb pork belly
- 1 chorizo sausage, sliced
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, peeled and cubed
- 1 leek, chopped
- 2 cloves garlic, minced
- 1 bay leaf

Instructions
- In a large pot, combine the soaked chickpeas, beef shank, and pork belly. Cover with water and bring to a boil. Skim off any foam that rises to the surface.
- Reduce heat to a simmer and add the chopped onion, carrots, leek, garlic, and bay leaf. Cook for 1 hour, adding more water if needed to keep the ingredients covered.
- After 1 hour, add the sliced chorizo and cubed potatoes to the pot. Season with paprika, salt, and pepper. Cook for an additional 30 minutes, or until the meat is tender and the chickpeas are soft.
- Once the stew is ready, remove the beef shank and pork belly from the pot. Slice the meat and arrange it on a serving platter.
- Serve the cocido madrileño with chorizo in bowls, making sure to include a portion of chickpeas, potatoes, and chorizo in each serving. Enjoy!
