Ingredients
- 3 eggs
- 1/4 cup sliced mushrooms
- 1/2 cup fresh spinach
- 1/4 cup shredded cheese
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- In a small bowl, beat the 3 eggs until well combined. Season with salt and pepper to taste.
- Heat a non-stick skillet over medium heat and add 1/2 tablespoon of butter. Once the butter has melted, add the sliced mushrooms and sauté for 2-3 minutes until they start to brown.
- Add the fresh spinach to the skillet and cook for an additional 1-2 minutes until wilted. Remove the mushrooms and spinach from the skillet and set aside.
- In the same skillet, add the remaining 1/2 tablespoon of butter. Once melted, pour in the beaten eggs, swirling the pan to spread them evenly. Let the eggs cook undisturbed for 1-2 minutes until the edges start to set.
- Sprinkle the sautéed mushrooms, spinach, and shredded cheese over one half of the omelette. Using a spatula, carefully fold the other half of the omelette over the filling.
- Cook for an additional 1-2 minutes until the cheese is melted and the omelette is cooked to your desired doneness.
- Slide the omelette onto a plate, cut in half, and serve hot.
