Instructions

  • In a glass or stainless steel bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for 15-20 minutes, or until the fish is opaque and 'cooked' by the lime juice.
  • Once the fish is 'cooked', drain off the excess lime juice. Add the chopped red onion, jalapeno, mango, avocado, and cilantro to the bowl with the fish. Gently toss to combine.
  • Season with salt and pepper to taste.
  • Serve the ceviche immediately with tortilla chips for scooping.
