Ingredients

  • 3 1/2 cups of all-purpose flour
  • 1/4 cup of granulated sugar
  • 1 tablespoon of active dry yeast
  • 1 teaspoon of salt
  • 1/2 cup of warm water
  • 4 eggs
  • 1 cup of unsalted butter, softened
  • 1 cup of shredded cheese (such as Gruyere or cheddar)
  • 1/4 cup of chopped fresh herbs (such as parsley, thyme, and chives)
  • 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of black pepper

Instructions

  • In a small bowl, dissolve 1 tablespoon of active dry yeast and 1/4 cup of granulated sugar in 1/2 cup of warm water. Let it sit for 5 minutes until foamy.
  • In a large mixing bowl, combine 3 1/2 cups of all-purpose flour and 1 teaspoon of salt. Make a well in the center and pour in the yeast mixture. Mix to form a sticky dough.
  • Add 4 eggs, one at a time, mixing well after each addition. Gradually add 1 cup of softened unsalted butter, mixing until the dough is smooth and elastic.
  • Cover the bowl with plastic wrap and let the dough rise in a warm place for 1 hour, or until doubled in size.
  • In a separate bowl, mix 1 cup of shredded cheese, 1/4 cup of chopped fresh herbs, 1/2 teaspoon of garlic powder, and 1/4 teaspoon of black pepper to create the savory filling.
  • Punch down the dough and divide it into 8 equal portions. Flatten each portion into a circle and place a spoonful of the savory filling in the center. Fold the edges over the filling and pinch to seal.
  • Place the filled dough portions on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let them rise for another 30 minutes.
  • Preheat the oven to 375°F (190°C).
  • Bake the savory herb and cheese brioche for 20-25 minutes, or until golden brown and cooked through.
  • Allow to cool for a few minutes before serving. Enjoy the delicious savory brioche warm or at room temperature.

The history of classic brioche with a savory herb and cheese filling can be traced back to the rich culinary traditions of France. Renowned for its light and airy texture, brioche has long been a staple in French baking. The addition of a savory herb and cheese filling elevates this classic pastry to a new level of indulgence, offering a delightful blend of flavors and aromas. Chefs in regions such as Provence and Burgundy have perfected the art of crafting brioche with savory fillings, using a combination of fresh herbs like thyme, rosemary, and parsley, along with rich, creamy cheeses such as Gruyère or Comté. This delectable creation has become a favorite in upscale bistros and patisseries across France, delighting diners with its irresistible combination of buttery brioche and savory, aromatic filling. Today, the best versions of this dish can be found in artisanal bakeries and gourmet restaurants that take pride in using high-quality ingredients and traditional baking techniques. Achieving the perfect balance of flavors and textures is essential when preparing this dish, as the buttery richness of the brioche should complement the savory herb and cheese filling without overpowering it. For those looking to recreate this culinary masterpiece at home, it's important to pay attention to the quality of the brioche dough, ensuring that it is light, fluffy, and rich in flavor. Additionally, selecting the right combination of herbs and cheeses is crucial to achieving a harmonious blend of savory notes. While the classic method involves shaping the brioche into individual rolls or a loaf with a swirl of filling, some chefs also experiment with alternative techniques, such as braiding the dough to create an eye-catching presentation. Whether enjoyed as a decadent breakfast treat or as part of an elegant brunch spread, classic brioche with a savory herb and cheese filling is a delightful indulgence that pays homage to the timeless art of French baking.
