- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup tomato sauce
- 1/4 cup water
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream
- 1 chipotle pepper in adobo sauce
- 1/4 cup mayonnaise
- 1 tbsp lime juice
Instructions
- In a small food processor or blender, combine 1 chipotle pepper in adobo sauce, 1/4 cup mayonnaise, and 1 tbsp lime juice. Blend until smooth to make the spicy chipotle sauce.
- In a large skillet, heat 1 tbsp of olive oil over medium heat. Add 1 small diced onion and cook until softened, about 3 minutes.
- Add 2 cloves of minced garlic and cook for an additional 1 minute.
- Add 1 lb of ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in 1 tsp ground cumin, 1 tsp chili powder, 1/2 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper. Cook for 1-2 minutes until fragrant.
- Add 1/2 cup tomato sauce and 1/4 cup water to the skillet. Simmer for 5-7 minutes until the sauce has thickened.
- While the beef is simmering, heat the flour tortillas in a dry skillet over medium heat for 30 seconds on each side.
- To assemble the tacos, divide the beef mixture among the tortillas. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, chopped cilantro, and a dollop of sour cream.
- Drizzle the spicy chipotle sauce over the tacos and serve immediately.
