Instructions

- In a large bowl, whisk together 2 cups of flour, 1/2 cup sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg.
- In a separate bowl, mix together 1/2 cup melted butter, 2 eggs, 1 teaspoon vanilla extract, and 1/2 cup milk.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples.
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
- For the streusel topping, combine 1/4 cup of flour, 1/4 cup of granulated sugar, 1/2 teaspoon of cinnamon, and 2 tablespoons of cold butter in a small bowl. Use a fork or your fingers to mix the ingredients until crumbly. Sprinkle the streusel over the muffin batter in the cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
