  • 1 block (14 oz) of firm tofu, drained and pressed
  • 1/4 cup of soy sauce
  • 2 tablespoons of lime juice
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of honey
  • 1/4 teaspoon of red pepper flakes
  • 4 cups of mixed salad greens
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of red onion, thinly sliced
  • 1/4 cup of fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  • In a shallow dish, whisk together 1/4 cup of soy sauce, 2 tablespoons of lime juice, 2 tablespoons of olive oil, 2 cloves of minced garlic, 1 teaspoon of honey, and 1/4 teaspoon of red pepper flakes.
  • Cut the pressed tofu into cubes and add them to the marinade, turning to coat. Let it marinate for at least 10 minutes.
  • Heat a non-stick skillet over medium-high heat. Add the marinated tofu cubes and cook for 3-4 minutes on each side, or until golden brown. Remove from heat and set aside.
  • In a large bowl, combine 4 cups of mixed salad greens, 1 cup of halved cherry tomatoes, 1/2 cup of thinly sliced red onion, and 1/4 cup of chopped cilantro.
  • Add the cooked tofu to the salad bowl and gently toss to combine.
  • In a small bowl, whisk together any remaining marinade with additional lime juice, olive oil, salt, and pepper to taste. Drizzle the dressing over the salad and toss to coat evenly.
  • Serve the cilantro lime tofu salad immediately and enjoy!
