Instructions

  • In a medium bowl, combine the shrimp, olive oil, cumin, chili powder, salt, pepper, 1/4 cup of cilantro, and the juice of 2 limes. Toss to coat the shrimp evenly and set aside to marinate for 10 minutes.
  • In a separate bowl, mix together the diced pineapple, red onion, red bell pepper, 1/4 cup of cilantro, lime juice, and a pinch of salt to make the pineapple salsa. Set aside.
  • Heat a large skillet over medium-high heat. Add the marinated shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque.
  • Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
  • To assemble the tacos, place a few shrimp on each tortilla and top with a spoonful of pineapple salsa.
