  • 1 pound of chorizo, sliced

Instructions

  • In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 teaspoon of salt. Gradually whisk in 1 cup of polenta. Reduce heat to low and cook, stirring frequently, for 15-20 minutes or until thickened. Remove from heat and cover to keep warm.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of sliced chorizo and cook for 5-7 minutes, or until browned. Remove chorizo from the skillet and set aside.
  • In the same skillet, add 1 chopped onion and cook for 3-4 minutes, or until softened. Add 2 cloves of minced garlic and cook for an additional 1 minute.
  • Stir in 1 can of diced tomatoes, 1 teaspoon of paprika, and 1/2 teaspoon of cayenne pepper. Season with salt and pepper to taste. Cook for 5 minutes, allowing the flavors to meld together.
  • Return the cooked chorizo to the skillet and stir to combine with the tomato mixture. Cook for an additional 2-3 minutes to heat through.
  • To serve, spoon a generous portion of creamy polenta onto a plate and top with the chorizo and tomato mixture. Garnish with fresh parsley and enjoy!
