Chorizo with Polenta
Created by: Howcan Team
Ingredients
- 1 cup of polenta
- 4 cups of water
- 1 teaspoon of salt
- 1 tablespoon of olive oil
- 1 pound of chorizo, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 can of diced tomatoes
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 teaspoon of salt. Gradually whisk in 1 cup of polenta. Reduce heat to low and cook, stirring frequently, for 15-20 minutes or until thickened. Remove from heat and cover to keep warm.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of sliced chorizo and cook for 5-7 minutes, or until browned. Remove chorizo from the skillet and set aside.
- In the same skillet, add 1 chopped onion and cook for 3-4 minutes, or until softened. Add 2 cloves of minced garlic and cook for an additional 1 minute.
- Stir in 1 can of diced tomatoes, 1 teaspoon of paprika, and 1/2 teaspoon of cayenne pepper. Season with salt and pepper to taste. Cook for 5 minutes, allowing the flavors to meld together.
- Return the cooked chorizo to the skillet and stir to combine with the tomato mixture. Cook for an additional 2-3 minutes to heat through.
- To serve, spoon a generous portion of creamy polenta onto a plate and top with the chorizo and tomato mixture. Garnish with fresh parsley and enjoy!
Chorizo with polenta is a classic dish with a rich history. Originating in Northern Spain, this hearty meal has been enjoyed for centuries. The spicy, flavorful chorizo sausage pairs perfectly with the creamy, comforting polenta. Renowned chefs like Jose Andres have popularized this dish, incorporating their own unique twists. In the United States, restaurants like Toro in New York City have gained acclaim for their delectable chorizo with polenta. The key to a perfect chorizo with polenta lies in the quality of the chorizo and the creamy texture of the polenta. For a twist, some chefs also grill the chorizo for a smoky flavor.
