Instructions
- In a large skillet over medium heat, cook 8 ounces of chorizo sausage, breaking it up with a spoon, until browned and cooked through, about 5 minutes.
- Push the chorizo to one side of the skillet and add 1/4 cup chopped onion and 1/4 cup chopped bell pepper to the other side. Cook until the vegetables are softened, about 3 minutes.
- In a bowl, whisk together 8 large eggs, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Pour the eggs into the skillet with the chorizo and vegetables. Cook, stirring occasionally, until the eggs are set, about 3-4 minutes.
- Meanwhile, warm 8 small flour tortillas in a dry skillet or in the microwave.
- Divide the chorizo and egg mixture among the tortillas. Top each with 2 tablespoons of salsa, a few slices of avocado, and a sprinkle of chopped fresh cilantro.
