  • In a large skillet, cook 8 ounces of chorizo sausage over medium heat, breaking it up with a spoon, until fully cooked, about 5-7 minutes.
  • While the chorizo is cooking, crack 8 large eggs into a bowl and beat them until well combined. Season with salt and pepper to taste.
  • Once the chorizo is cooked, push it to one side of the skillet and add 1 tablespoon of olive oil to the empty side. Pour the beaten eggs into the skillet and let them sit for a few seconds to start setting.
  • Using a spatula, gently stir and fold the eggs until they are softly set and slightly runny in places. Remove the skillet from the heat and sprinkle 1 cup of shredded cheddar cheese over the eggs. Let the residual heat melt the cheese.
  • Warm 4 large flour tortillas in a dry skillet or in the microwave for a few seconds until they are pliable.
  • Divide the chorizo and egg mixture among the warm tortillas, placing it in the center of each tortilla. Fold the bottom of the tortilla up over the filling, then fold in the sides, and roll it up tightly to enclose the filling.
  • Serve the chorizo and egg wraps immediately, with salsa, avocado, and sour cream on the side if desired.
