Instructions

  • In a large skillet, cook 1 lb of chorizo sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  • Add the diced onion, minced garlic, and diced jalapeno to the skillet with the chorizo. Cook for an additional 3-4 minutes until the vegetables are softened.
  • Reduce the heat to low and sprinkle 1 cup of shredded Oaxaca cheese and 1 cup of shredded Chihuahua cheese over the chorizo mixture. Allow the cheese to melt, stirring occasionally, for about 3-4 minutes.
  • Once the cheese is melted and the mixture is well combined, remove the skillet from the heat.
  • Sprinkle the chopped fresh cilantro over the choriqueso and serve immediately with tortilla chips for dipping.
