- 2 boneless, skinless chicken breasts

- 2 tablespoons red wine vinegar

- 1/2 cup Kalamata olives, pitted
- 4 ounces feta cheese, crumbled
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together 2 tablespoons of olive oil, red wine vinegar, dried oregano, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.
- Brush the chicken breasts with the remaining 2 tablespoons of olive oil and season with the remaining 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.
- Grill the chicken for 6-7 minutes per side, or until cooked through. Let it rest for 5 minutes, then slice into strips.
- In a large bowl, combine the chopped romaine lettuce, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and pitted Kalamata olives.
- Add the grilled chicken strips and crumbled feta cheese to the bowl.
- Drizzle the dressing over the salad and toss to combine.
