Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together 2 1/4 cups of flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
  • In a separate large bowl, cream together 3/4 cup of sugar and 1/2 cup of softened butter until light and fluffy.
  • Beat in 2 eggs, one at a time, then stir in 1 teaspoon of vanilla extract.
  • Gradually blend the dry ingredients into the wet mixture. Fold in 1 cup of chocolate chips.
  • Divide the dough in half and shape each half into a 9x3 inch log. Place the logs on the prepared baking sheet, and flatten slightly.
  • Bake for 25 to 30 minutes in the preheated oven, or until golden brown. Remove from the oven, and set aside to cool for 10 minutes.
  • Reduce the oven temperature to 275 degrees F.
  • Cut the logs into 3/4 inch thick diagonal slices. Place the slices cut side down on the baking sheet.
  • Bake for an additional 20 to 25 minutes, or until dry and crisp. Cool completely, and store in an airtight container.
