Chocolate Chip Biscotti

Ingredients
- 2 1/4 cups of all-purpose flour
- 1 1/2 teaspoons of baking powder
- 1/4 teaspoon of salt
- 3/4 cup of granulated sugar
- 1/2 cup of unsalted butter, softened
- 2 large eggs
- 1 teaspoon of vanilla extract
- 1 cup of semisweet chocolate chips
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together 2 1/4 cups of flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
- In a separate large bowl, cream together 3/4 cup of sugar and 1/2 cup of softened butter until light and fluffy.
- Beat in 2 eggs, one at a time, then stir in 1 teaspoon of vanilla extract.
- Gradually blend the dry ingredients into the wet mixture. Fold in 1 cup of chocolate chips.
- Divide the dough in half and shape each half into a 9x3 inch log. Place the logs on the prepared baking sheet, and flatten slightly.
- Bake for 25 to 30 minutes in the preheated oven, or until golden brown. Remove from the oven, and set aside to cool for 10 minutes.
- Reduce the oven temperature to 275 degrees F.
- Cut the logs into 3/4 inch thick diagonal slices. Place the slices cut side down on the baking sheet.
- Bake for an additional 20 to 25 minutes, or until dry and crisp. Cool completely, and store in an airtight container.
