  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 2 ripe avocados
  • 1 lime, juiced
  • 1/4 cup diced red onion

  • 2 ripe avocados
  • 1 lime, juiced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  • In a bowl, combine the chicken strips, minced chipotle peppers, cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Toss to coat the chicken evenly.
  • In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken strips and cook for 6-8 minutes, or until fully cooked and slightly charred. Remove from heat and set aside.
  • In a separate bowl, mash the avocados with lime juice, diced red onion, chopped cilantro, salt, and pepper to make the guacamole.
  • Warm the flour tortillas in a dry skillet or in the microwave for 30 seconds.
  • To assemble the tacos, place a spoonful of guacamole on each tortilla, followed by the chipotle chicken strips, shredded lettuce, diced tomatoes, red onion, cilantro, cheddar cheese, and a dollop of sour cream.
