Instructions

  • In a large pot, bring the vegetable broth to a boil.
  • Add the garlic, ginger, soy sauce, rice vinegar, and sesame oil to the pot.
  • Reduce the heat to a simmer and let the broth infuse with the flavors for 10 minutes.
  • Add the tofu cubes to the broth and let it simmer for another 5 minutes.
  • In a separate pot, cook the Chinese wheat noodles according to the package instructions. Drain and set aside.
  • Add the bok choy and green onions to the broth and cook for 2-3 minutes until the vegetables are tender.
  • Divide the cooked noodles into serving bowls and ladle the tofu and vegetable broth over the noodles.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!
