Ingredients
- 8 oz firm tofu, cut into cubes
- 8 oz dried Chinese wheat noodles
- 6 cups vegetable broth
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 cup sliced bok choy
- 1/2 cup sliced green onions
- Salt and pepper to taste
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the garlic, ginger, soy sauce, rice vinegar, and sesame oil to the pot.
- Reduce the heat to a simmer and let the broth infuse with the flavors for 10 minutes.
- Add the tofu cubes to the broth and let it simmer for another 5 minutes.
- In a separate pot, cook the Chinese wheat noodles according to the package instructions. Drain and set aside.
- Add the bok choy and green onions to the broth and cook for 2-3 minutes until the vegetables are tender.
- Divide the cooked noodles into serving bowls and ladle the tofu and vegetable broth over the noodles.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
