Instructions

  • In a large skillet, heat 2 tablespoons of vegetable oil over medium heat.
  • Add 1/2 cup of chopped onion, 2 cloves of minced garlic, and 1 diced jalapeno pepper to the skillet. Cook for 3-4 minutes until the onions are translucent.
  • Stir in 1 cup of spicy salsa verde, 1/2 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Simmer for 5 minutes.
  • Add 4 cups of tortilla chips to the skillet and gently toss to coat the chips with the salsa verde mixture. Cook for 2-3 minutes until the chips are slightly softened.
  • Sprinkle 1/2 cup of shredded cheese over the top of the chilaquiles. Cover the skillet and cook for an additional 2-3 minutes until the cheese is melted.
  • Remove the skillet from the heat and let it cool for a few minutes.
  • Serve the chilaquiles on plates and top with 1/4 cup of sour cream and sliced avocado.
