Chilaquiles with Fried Egg

Ingredients
- 12 corn tortillas, cut into triangles
- 1 cup of red or green salsa
- 1/2 cup of chicken broth
- 1/2 cup of vegetable oil
- 1/2 cup of chopped onion
- 1/2 cup of crumbled queso fresco
- 4 eggs
- Salt and pepper to taste
- 1/4 cup of chopped fresh cilantro
Instructions
- In a large skillet, heat the vegetable oil over medium-high heat. Once hot, fry the tortilla triangles in batches until golden and crispy. Remove and drain on paper towels.
- In the same skillet, sauté the chopped onion until translucent. Add the fried tortilla triangles back into the skillet.
- Pour in the salsa and chicken broth, and gently toss to coat the tortillas. Cook for 5-7 minutes, or until the tortillas have softened slightly but are still holding their shape.
- In a separate non-stick skillet, fry the eggs to your desired doneness, seasoning with salt and pepper.
- To serve, divide the chilaquiles among plates, top each portion with a fried egg, and sprinkle with crumbled queso fresco and chopped cilantro.
