  • 1/4 cup of chopped fresh cilantro

  • 1/2 cup of chicken broth
  • 1/2 cup of vegetable oil
  • 1/2 cup of chopped onion
  • 1/2 cup of crumbled queso fresco
  • 4 eggs
  • Salt and pepper to taste
  • 1/4 cup of chopped fresh cilantro

Instructions

  • In a large skillet, heat the vegetable oil over medium-high heat. Once hot, fry the tortilla triangles in batches until golden and crispy. Remove and drain on paper towels.
  • In the same skillet, sauté the chopped onion until translucent. Add the fried tortilla triangles back into the skillet.
  • Pour in the salsa and chicken broth, and gently toss to coat the tortillas. Cook for 5-7 minutes, or until the tortillas have softened slightly but are still holding their shape.
  • In a separate non-stick skillet, fry the eggs to your desired doneness, seasoning with salt and pepper.
  • To serve, divide the chilaquiles among plates, top each portion with a fried egg, and sprinkle with crumbled queso fresco and chopped cilantro.
