Chilaquiles

Ingredients
- 8 corn tortillas, cut into wedges
- 1 cup of red or green salsa
- 1/2 cup of shredded cheese (such as Monterey Jack or Cheddar)
- 4 eggs
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of diced onion
- 1/4 cup of sour cream
- 1 avocado, sliced
- 1 can of refried beans
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the tortilla wedges and fry until golden and crisp, about 3-4 minutes. Remove from the skillet and drain on paper towels.
- In the same skillet, add the diced onion and cook until softened, about 2 minutes.
- Pour the salsa over the onions and bring to a simmer.
- Add the fried tortilla wedges to the skillet and toss to coat with the salsa.
- Sprinkle the shredded cheese over the top and cover the skillet to melt the cheese, about 2 minutes.
- While the cheese is melting, in a separate non-stick skillet, fry the eggs to your desired doneness.
- To serve, divide the chilaquiles among 4 plates, top each with a fried egg, and garnish with chopped cilantro, a dollop of sour cream, and sliced avocado.
- Serve with refried beans on the side and enjoy!
