Ingredients
- 8 corn tortillas, cut into wedges
- 1 cup of red or green salsa
- 1/2 cup of shredded cheese (such as Monterey Jack or Cheddar)
- 4 eggs
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of diced onion
- 1/4 cup of sour cream
- 1 avocado, sliced
- 1 can of refried beans
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the tortilla wedges and fry until golden and crisp, about 3-4 minutes. Remove from the skillet and drain on paper towels.
- In the same skillet, add the diced onion and cook until softened, about 2 minutes.
- Pour the salsa over the onions and bring to a simmer.
- Add the fried tortilla wedges to the skillet and toss to coat with the salsa.
- Sprinkle the shredded cheese over the top and cover the skillet to melt the cheese, about 2 minutes.
- While the cheese is melting, in a separate non-stick skillet, fry the eggs to your desired doneness.
- To serve, divide the chilaquiles among 4 plates, top each with a fried egg, and garnish with chopped cilantro, a dollop of sour cream, and sliced avocado.
- Serve with refried beans on the side and enjoy!
Chilaquiles is a traditional Mexican dish with a rich history dating back to the ancient Aztecs. This flavorful dish consists of fried tortilla strips simmered in a delicious salsa, topped with cheese, crema, and sometimes eggs or shredded chicken. It's a popular breakfast or brunch item in Mexico, known for its comforting and satisfying flavors. Chefs and home cooks across Mexico have put their own unique spin on chilaquiles, incorporating regional ingredients and techniques. Today, some of the best chilaquiles can be found in Mexico City, where renowned chefs have perfected the art of this beloved dish. The key to perfect chilaquiles lies in the quality of the salsa and the texture of the fried tortillas, which should be crispy yet tender. While the classic red or green salsa is most common, some variations include mole or pipian sauces for a unique twist. Whether enjoyed at a bustling street food stall or a high-end restaurant, chilaquiles continue to be a beloved staple of Mexican cuisine.
