  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes

  • Fresh parsley for garnish

Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the chopped onion and cook for 3-4 minutes until softened.
  • Stir in the minced garlic, diced carrots, diced celery, and diced red bell pepper. Cook for another 5 minutes until the vegetables start to soften.
  • Add the cumin, paprika, turmeric, and cayenne pepper. Stir to coat the vegetables in the spices.
  • Pour in the drained and rinsed chickpeas, vegetable broth, and diced tomatoes. Season with salt and pepper to taste.
  • Bring the stew to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
