Chickpea Stew

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and cook for 3-4 minutes until softened.
- Stir in the minced garlic, diced carrots, diced celery, and diced red bell pepper. Cook for another 5 minutes until the vegetables start to soften.
- Add the cumin, paprika, turmeric, and cayenne pepper. Stir to coat the vegetables in the spices.
- Pour in the drained and rinsed chickpeas, vegetable broth, and diced tomatoes. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
- Taste and adjust the seasoning if needed.
- Serve the chickpea stew hot, garnished with fresh parsley.
