Chickpea pasta, also known as "pasta di ceci" in Italian, has a rich history dating back to ancient times. Originating in the Mediterranean region, chickpea pasta was a staple in the diets of ancient civilizations due to its versatility and nutritional value. Chefs and home cooks in regions like Italy, Greece, and the Middle East have long cherished this dish for its hearty texture and nutty flavor. Today, the best versions of chickpea pasta can be found in traditional Italian trattorias and modern health-conscious restaurants. The key to perfecting this dish lies in using high-quality chickpea flour and mastering the art of shaping the pasta. For a unique twist, some chefs incorporate herbs and spices into the pasta dough, elevating its taste profile.
