Instructions

  • Cook the chickpea pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat 2 tbsp of olive oil over medium heat.
  • Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the halved cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.
  • Add the cooked chickpea pasta to the skillet and toss to combine with the tomatoes and garlic.
  • Season with salt and pepper to taste, and stir in the chopped fresh basil.
  • Remove from heat and serve the chickpea pasta with a sprinkle of grated Parmesan cheese on top.
