  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 burger buns
  • Lettuce, tomato, and avocado for topping
  • 1/2 cup mayonnaise
  • 1 tablespoon adobo sauce (from a can of chipotle peppers)
  • 1 teaspoon lime juice
  • 1/2 teaspoon chipotle powder

Instructions

  • In a food processor, combine 1 can of chickpeas, 1/2 cup breadcrumbs, 1/4 cup finely chopped red onion, 2 cloves minced garlic, 1 teaspoon cumin, 1/2 teaspoon paprika, 1/4 teaspoon cayenne pepper, and salt and pepper to taste. Pulse until well combined.
  • Form the chickpea mixture into 4 patties and place them on a baking sheet. Refrigerate for 10 minutes to firm up.
  • While the patties are chilling, make the chipotle aioli by mixing 1/2 cup mayonnaise, 1 tablespoon adobo sauce, 1 teaspoon lime juice, and 1/2 teaspoon chipotle powder in a small bowl. Set aside.
  • Heat a grill or skillet over medium heat. Cook the chickpea patties for 4-5 minutes on each side, until golden brown and heated through.
  • Toast the burger buns on the grill or in the skillet for 1-2 minutes.
  • Assemble the burgers by spreading a generous amount of chipotle aioli on the bottom half of each bun. Top with a chickpea patty, lettuce, tomato, and avocado. Add the top bun and serve immediately.
