Chicken Satay with Peanut Sauce

Ingredients
- 1 pound of chicken breast, cut into strips
- 1/4 cup of soy sauce
- 2 tablespoons of brown sugar
- 1 tablespoon of curry powder
- 1 teaspoon of ground cumin
- 1/2 teaspoon of turmeric
- 1/4 cup of coconut milk
- 1/4 cup of smooth peanut butter
- 2 tablespoons of lime juice
- 1 tablespoon of soy sauce
- 1 tablespoon of brown sugar
- 1/2 teaspoon of red pepper flakes
- Bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, mix 1/4 cup of soy sauce, 2 tablespoons of brown sugar, 1 tablespoon of curry powder, 1 teaspoon of ground cumin, 1/2 teaspoon of turmeric, and 1/4 cup of coconut milk. Add the chicken strips and marinate for at least 1 hour.
- Thread the marinated chicken strips onto the soaked bamboo skewers.
- In a small saucepan, combine 1/4 cup of smooth peanut butter, 2 tablespoons of lime juice, 1 tablespoon of soy sauce, 1 tablespoon of brown sugar, and 1/2 teaspoon of red pepper flakes. Cook over low heat, stirring constantly, until the sauce is smooth and heated through.
- Preheat the grill or grill pan over medium-high heat. Grill the chicken skewers for 3-4 minutes on each side, or until cooked through and slightly charred.
- Serve the chicken satay with the warm peanut sauce on the side. Enjoy!
