Instructions

  • In a bowl, mix 1/4 cup of soy sauce, 2 tablespoons of brown sugar, 1 tablespoon of curry powder, 1 teaspoon of ground cumin, 1/2 teaspoon of turmeric, and 1/4 cup of coconut milk. Add the chicken strips and marinate for at least 1 hour.
  • Thread the marinated chicken strips onto the soaked bamboo skewers.
  • In a small saucepan, combine 1/4 cup of smooth peanut butter, 2 tablespoons of lime juice, 1 tablespoon of soy sauce, 1 tablespoon of brown sugar, and 1/2 teaspoon of red pepper flakes. Cook over low heat, stirring constantly, until the sauce is smooth and heated through.
  • Preheat the grill or grill pan over medium-high heat. Grill the chicken skewers for 3-4 minutes on each side, or until cooked through and slightly charred.
