Ingredients
- 1.5 lbs of chicken breast, cut into strips

- 1 fresh pineapple, peeled, cored, and cut into chunks
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine 1 cup of coconut milk, 1/4 cup of soy sauce, 2 tablespoons of brown sugar, 2 cloves of minced garlic, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of turmeric, and 1/4 teaspoon of cayenne pepper. Mix well to make the marinade.
- Add the chicken strips to the marinade, cover, and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto the soaked skewers, shaking off any excess marinade, and set aside.
- Thread the pineapple chunks onto separate skewers.
