  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers, drained
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  • Season the chicken breasts with salt and pepper, then dredge them in 1/2 cup of flour, shaking off any excess.
  • In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining 2 tablespoons of butter, lemon juice, and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the capers and simmer for 2 minutes. Return the chicken to the skillet and simmer for an additional 2 minutes, spooning the sauce over the chicken.

  • Mash the potatoes and garlic with a potato masher or fork. Stir in the heavy cream and 4 tablespoons of butter until smooth and creamy. Season with salt and pepper to taste.
  • To serve, divide the garlic mashed potatoes among 4 plates and top each with a chicken breast. Spoon the piccata sauce over the chicken and garnish with chopped parsley.

Italian

Chicken Piccata is a classic Italian dish that originated in the region of Lombardy. It consists of thinly sliced chicken breasts, dredged in flour, and then sautéed to golden perfection. The chicken is then topped with a tangy and savory sauce made with lemon juice, capers, and butter, creating a perfect balance of flavors. This dish is often served with a side of garlic mashed potatoes, which complement the zesty flavors of the piccata sauce. One of the most famous renditions of Chicken Piccata can be found at the renowned Italian restaurant, Il Ristorante in Milan. Chef Giovanni, known for his impeccable culinary skills, prepares the dish with utmost precision, ensuring that the chicken is tender and the sauce is bursting with citrusy goodness. The key to a perfect Chicken Piccata lies in the balance of flavors and the texture of the chicken. It's crucial to achieve a crispy exterior while keeping the meat juicy and tender. Additionally, the sauce should have just the right amount of acidity from the lemon and brininess from the capers. For those looking to explore alternative methods, a popular variation of Chicken Piccata involves substituting the chicken with veal, resulting in Veal Piccata. This variation offers a richer and more delicate flavor, making it a favorite among food enthusiasts. When it comes to the side of garlic mashed potatoes, the key is to infuse the potatoes with the perfect amount of garlic, butter, and cream, creating a lusciously smooth and flavorful accompaniment to the vibrant Chicken Piccata. For the best version of this dish today, look no further than authentic Italian restaurants that prioritize fresh, high-quality ingredients and traditional cooking techniques. Whether it's in Lombardy, Milan, or your local Italian eatery, savoring a well-executed Chicken Piccata with a side of garlic mashed potatoes is a culinary experience not to be missed.
