  • Pound the chicken breasts to an even thickness, then season with salt and pepper.
  • Dredge each chicken breast in the flour, then dip into the beaten eggs, and finally coat with the breadcrumb and Parmesan mixture.
  • In a large skillet, heat the olive oil over medium-high heat. Add the breaded chicken breasts and cook until golden brown and crispy, about 3-4 minutes per side.
  • Transfer the cooked chicken breasts to a baking sheet and top each with marinara sauce and a slice of mozzarella cheese.
  • Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
  • While the chicken is baking, lightly toast the sub rolls in the oven for 2-3 minutes.
