  • 2 large zucchinis, spiralized into noodles

  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil leaves for garnish

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the minced garlic for 1-2 minutes until fragrant.
  • Add the spiralized zucchini noodles to the skillet and cook for 2-3 minutes until just tender. Remove from heat and set aside.
  • In a small bowl, mix together the breadcrumbs, dried oregano, salt, and black pepper.
  • To assemble the casserole, spread half of the marinara sauce in the bottom of the prepared baking dish. Layer half of the zucchini noodles on top of the sauce, followed by half of the cooked chicken pieces. Sprinkle half of the mozzarella and Parmesan cheese over the chicken. Repeat the layers with the remaining ingredients, ending with the cheese on top.
  • Sprinkle the breadcrumb mixture evenly over the top of the casserole.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the breadcrumbs are golden brown.
