Rice and Bean Crusted Chicken Parmesan

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup cooked white rice
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C). Grease a baking dish with olive oil.
- In a food processor, combine 1 cup of cooked white rice, 1/2 cup of black beans, 1/2 cup of grated Parmesan cheese, 1/2 cup of breadcrumbs, 1 teaspoon of Italian seasoning, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Pulse until the mixture is finely ground and well combined.
- Place the rice and bean mixture on a plate. Dredge each chicken breast in 1/4 cup of all-purpose flour, then dip into 2 beaten eggs, and finally coat with the rice and bean mixture, pressing gently to adhere.
- Place the coated chicken breasts in the prepared baking dish. Bake for 20 minutes, or until the chicken is cooked through and the crust is golden and crispy.
- Remove the baking dish from the oven and spoon 1 cup of marinara sauce over each chicken breast. Sprinkle 1 cup of shredded mozzarella cheese on top of the sauce.
- Return the baking dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
