Ingredients
- 1 pound boneless, skinless chicken breasts, sliced into strips
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- 8 small flour tortillas
- Optional toppings: sour cream, guacamole, shredded cheese, salsa
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the sliced onions and peppers to the skillet and cook, stirring occasionally, until they are caramelized and softened, about 10-12 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the chicken strips and cook until they are no longer pink in the center, about 5-6 minutes.
- Add the minced garlic, chili powder, cumin, paprika, salt, and black pepper to the skillet with the chicken. Cook for an additional 2 minutes, stirring to coat the chicken evenly with the spices.
- Return the caramelized onions and peppers to the skillet with the chicken. Stir to combine and cook for another 2-3 minutes to heat through.
- Sprinkle the chopped cilantro over the chicken fajita mixture and stir to combine.
- Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
- Serve the chicken fajita mixture in the warm tortillas, and top with optional toppings such as sour cream, guacamole, shredded cheese, and salsa.
