Ingredients
- 2 boneless, skinless chicken breasts
- 1 head of romaine lettuce, chopped
- 1/2 cup of croutons
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 1 teaspoon of Dijon mustard
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. Heat a grill pan over medium-high heat and cook the chicken for 6-7 minutes on each side, or until cooked through. Let it rest for 5 minutes, then slice into strips.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, and a pinch of salt and pepper to make the dressing.
- In a large bowl, toss the chopped romaine lettuce with the dressing until well coated.
- Divide the dressed lettuce onto 4 plates, then top each with the sliced chicken, croutons, and grated Parmesan cheese.
