  • 1 teaspoon of Dijon mustard
  • 1 clove of garlic, minced
  • Salt and pepper to taste

  • Salt and pepper to taste

Instructions

  • Season the chicken breasts with salt and pepper. Heat a grill pan over medium-high heat and cook the chicken for 6-7 minutes on each side, or until cooked through. Let it rest for 5 minutes, then slice into strips.
  • In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, and a pinch of salt and pepper to make the dressing.
  • In a large bowl, toss the chopped romaine lettuce with the dressing until well coated.
  • Divide the dressed lettuce onto 4 plates, then top each with the sliced chicken, croutons, and grated Parmesan cheese.
  • Serve immediately and enjoy!
