Instructions

  • In a small bowl, whisk together 1/2 cup of low-sodium soy sauce, 1/4 cup of chicken broth, 2 tablespoons of cornstarch, 2 tablespoons of honey, and 1/4 teaspoon of red pepper flakes. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry for 5-6 minutes, or until cooked through. Remove the chicken from the skillet and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir in 3 cloves of minced garlic and 1 teaspoon of grated ginger, and cook for 1 minute.
  • Add 2 cups of broccoli florets and sliced red bell pepper to the skillet. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
  • Return the cooked chicken to the skillet. Pour the soy sauce mixture over the chicken and vegetables. Cook, stirring constantly, for 2-3 minutes, or until the sauce has thickened and everything is heated through.
  • Serve the chicken and broccoli stir-fry over cooked rice. Enjoy!
