Ingredients
- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup unsalted butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the fettuccine pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook until no longer pink in the center, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Cook for 1-2 minutes until fragrant.
- Reduce the heat to medium and add the heavy cream and butter to the skillet. Stir constantly until the butter is melted and the cream is heated through.
- Add the grated Parmesan cheese to the skillet and stir until the sauce is smooth and creamy.
- Season the sauce with salt and pepper to taste.
- Add the cooked fettuccine and cooked chicken to the skillet, tossing to coat everything in the creamy alfredo sauce.
- Garnish with fresh parsley and serve hot. Enjoy!
