Ingredients
- 1 1/2 cups warm water
- 1 tablespoon sugar
- 2 teaspoons kosher salt
- 1 package active dry yeast
- 4 1/2 cups all-purpose flour
- 4 tablespoons unsalted butter, melted
- 10 cups water
- 2/3 cup baking soda
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 egg beaten with 1 tablespoon water, for egg wash
Instructions
- In a stand mixer, combine 1 1/2 cups warm water, 1 tablespoon sugar, and 2 teaspoons kosher salt. Sprinkle in the yeast and let it sit for 5 minutes until it begins to foam.
- Add the flour and melted butter to the yeast mixture. Using the dough hook attachment, mix on low speed until the dough comes together. Increase the speed to medium and knead for about 4-5 minutes until the dough is smooth and pulls away from the sides of the bowl.
- Transfer the dough to a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper and set aside.
- In a large pot, bring 10 cups of water and 2/3 cup baking soda to a rolling boil.
- While the water is boiling, punch down the dough and divide it into 8 equal pieces. Roll each piece into a 24-inch rope. Cut each rope into 1 1/2-inch pieces to make the pretzel bites.
- Drop the pretzel bites into the boiling water in batches for 30 seconds. Remove them with a slotted spoon and place them on the prepared baking sheet.
- Brush the pretzel bites with the egg wash and sprinkle with a little kosher salt. Bake for 12-14 minutes, or until golden brown.
- In a large bowl, combine the shredded cheddar, mozzarella, and Parmesan cheeses, chopped parsley, garlic powder, onion powder, and black pepper.
- Once the pretzel bites are baked, allow them to cool for a few minutes. Then, while they are still warm, toss them in the cheese mixture until they are well coated.
