  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  • Preheat the oven to 350°F. Cook the jumbo pasta shells according to package instructions. Drain and set aside to cool.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute. Remove from heat and let cool.
  • In a large mixing bowl, combine the thawed and drained chopped spinach, ricotta cheese, 1/2 cup of shredded mozzarella cheese, grated Parmesan cheese, egg, dried oregano, dried basil, salt, and black pepper. Add the cooled onion and garlic mixture and mix until well combined.
  • Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.
  • Stuff each cooked pasta shell with the spinach and cheese mixture and place them in the baking dish. Once all the shells are stuffed, pour the remaining marinara sauce over the shells. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese on top.
  • Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  • Let the stuffed shells cool for a few minutes before serving. Enjoy!
