  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 (8-inch) flour tortillas
  • 2 tablespoons vegetable oil

Instructions

  • In a large mixing bowl, combine 2 cups of cooked and shredded chicken breast, 1 cup of shredded cheddar cheese, 1 cup of shredded Monterey Jack cheese, 1/2 cup of diced onion, 1/2 cup of diced bell pepper, 1/4 cup of chopped fresh cilantro, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

Mexican

Cheesy Chicken Quesadillas have a rich history rooted in Mexican cuisine. This beloved dish is a fusion of flavors, combining tender chicken, gooey cheese, and zesty spices, all enveloped in a warm, crispy tortilla. The origins of this dish can be traced back to the vibrant street food culture of Mexico, where talented chefs would skillfully prepare these quesadillas on sizzling griddles, infusing them with authentic flavors and aromas. Today, the best versions of this dish can be found in Mexican restaurants across the United States, particularly in regions with a strong Mexican culinary influence, such as California, Texas, and New Mexico. The key to perfecting this dish lies in the quality of the cheese, the tenderness of the chicken, and the balance of spices. For a unique twist, some chefs incorporate alternative ingredients like caramelized onions, jalapeños, or avocado, adding depth and complexity to the classic recipe. Whether enjoyed as a snack, appetizer, or main course, Cheesy Chicken Quesadillas continue to captivate food enthusiasts with their irresistible combination of flavors and textures.
