- 2 cups cooked and shredded chicken breast
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 (8-inch) flour tortillas
- 2 tablespoons vegetable oil
Instructions
- In a large mixing bowl, combine 2 cups of cooked and shredded chicken breast, 1 cup of shredded cheddar cheese, 1 cup of shredded Monterey Jack cheese, 1/2 cup of diced onion, 1/2 cup of diced bell pepper, 1/4 cup of chopped fresh cilantro, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Lay out 4 of the flour tortillas and divide the chicken and cheese mixture evenly among them. Place the remaining 4 tortillas on top to create 4 quesadillas.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Place 2 quesadillas in the skillet and cook for 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more oil if needed.
- Remove the quesadillas from the skillet and let them cool for a few minutes before cutting them into wedges.
- Serve the cheesy chicken quesadillas with your favorite toppings such as sour cream, salsa, or guacamole. Enjoy!
