Instructions

  • In a large pot, melt 2 tablespoons of butter over medium heat.
  • Whisk in 2 tablespoons of all-purpose flour to create a roux, and cook for 2-3 minutes until golden brown.
  • Gradually pour in 4 cups of chicken or vegetable broth, stirring constantly to avoid lumps.
  • Add the chopped cauliflower florets to the pot and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the cauliflower is tender.
  • Using an immersion blender or transferring in batches to a blender, puree the soup until smooth.
  • Stir in 1 cup of heavy cream, 1 cup of shredded cheddar cheese, and 1/2 cup of grated Parmesan cheese until the cheese is melted and the soup is creamy.
  • Season with 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and salt and pepper to taste. Simmer for an additional 5 minutes.
