  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 (8-inch) flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 2 tablespoons vegetable oil

Instructions

  • In a large skillet, cook 1 pound of ground beef and 1/2 cup of diced onion over medium heat until the beef is no longer pink. Drain any excess grease.
  • Stir in 1 can of black beans, 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for an additional 2-3 minutes, stirring occasionally, until the mixture is heated through. Remove from heat.
  • Place 4 tortillas on a flat surface. Sprinkle 1/4 cup of shredded cheese over each tortilla. Spoon the beef and bean mixture evenly over the cheese. Top with another 1/4 cup of shredded cheese and place a second tortilla on top to form a quesadilla.
  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Carefully place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas, using the remaining oil as needed.
  • Remove the quesadillas from the skillet and let them cool for a few minutes before slicing into wedges. Serve with your favorite toppings such as salsa, sour cream, or guacamole. Enjoy!
