Mixed Cheese Quesadilla

Ingredients
- 4 flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded pepper jack cheese
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
Instructions
- In a medium bowl, mix together 1 cup of shredded cheddar cheese, 1/2 cup of shredded mozzarella cheese, and 1/2 cup of shredded pepper jack cheese.
- Place 2 flour tortillas on a flat surface. Divide the cheese mixture evenly between the two tortillas, spreading it out to cover the entire surface of each tortilla.
- Sprinkle 1/4 cup of diced red onion and 1/4 cup of chopped fresh cilantro over the cheese on one of the tortillas. Place the other tortilla on top to form a quesadilla.
- In a large skillet, heat 1/2 tablespoon of olive oil over medium heat. Carefully place the quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining 2 tortillas, cheese, red onion, and cilantro.
- Once all the quesadillas are cooked, remove them from the skillet and let them cool for a minute before slicing into wedges.
- Serve hot and enjoy!
