Ingredients

  • 2 cups of shredded cheese
  • 1/2 cup of diced onion
  • 1/4 cup of chopped cilantro
  • 1 can of enchilada sauce
  • 8 corn tortillas
  • 1 tablespoon of vegetable oil

Instructions

  • Preheat the oven to 375 degrees F.
  • In a mixing bowl, combine 1 1/2 cups of shredded cheese, 1/2 cup of diced onion, and 1/4 cup of chopped cilantro.
  • Pour 1/2 cup of enchilada sauce into the bottom of a 9x13 inch baking dish.
  • In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Warm each corn tortilla in the oil for about 10 seconds on each side, then transfer to a paper towel-lined plate to drain.
  • Place a spoonful of the cheese mixture in the center of each tortilla, roll it up, and place it seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the rolled tortillas, and sprinkle the remaining 1/2 cup of shredded cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy!
