Instructions

  • In a large bowl, combine 1 1/2 cups warm water, 1 packet of active dry yeast, and 1 teaspoon of sugar. Let it sit for 5 minutes until foamy.
  • Add 4 cups of all-purpose flour and 1 teaspoon of salt to the yeast mixture. Mix until a dough forms.
  • Turn the dough out onto a floured surface and knead for 5 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • Punch down the dough and divide it into small pieces. Flatten each piece and place a small amount of shredded cheddar cheese in the center. Fold the dough over the cheese and roll into a ball, making sure the cheese is completely enclosed.
  • In a large pot, bring 8 cups of water to a boil. Add 1/2 cup of baking soda to the boiling water.
  • Boil the pretzel bites in batches for 30 seconds, then remove with a slotted spoon and place them on the prepared baking sheet.
