Ingredients
- 1 head of cauliflower, grated into rice
- 1 cup of broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup of snap peas
- 1/4 cup of teriyaki sauce
- 2 tablespoons of sesame oil
- 1 tablespoon of soy sauce
- 1 teaspoon of minced garlic
- 1/4 cup of chopped green onions
- 1 tablespoon of sesame seeds
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of sesame oil over medium heat.
- Add the cauliflower rice to the skillet and cook for 5-7 minutes, stirring occasionally, until tender. Season with salt and pepper to taste. Remove from heat and set aside.
- In the same skillet, heat the remaining 1 tablespoon of sesame oil over medium heat.
- Add the broccoli, bell pepper, carrot, and snap peas to the skillet and cook for 3-4 minutes, or until the vegetables are tender-crisp.
- Add the minced garlic to the skillet and cook for an additional 1 minute.
- Pour the teriyaki sauce and soy sauce over the vegetables, and stir to combine. Cook for 1-2 minutes, or until the sauce is heated through.
- Divide the cauliflower rice among 4 bowls, and top with the teriyaki vegetables.
