Ingredients
- 1 1/2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 teaspoon of ground cinnamon

- 1/2 cup of unsalted butter, melted
- 1/2 cup of brown sugar
- 1/4 cup of granulated sugar
- 2 large eggs
- 1 teaspoon of vanilla extract
- 1 1/2 cups of grated carrots
- 1/2 cup of chopped walnuts or pecans (optional)
- 1/3 cup of raisins (optional)
Instructions
- Preheat the oven to 350°F. Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together 1 1/2 cups of flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of ground nutmeg.
- In a large bowl, mix together 1/2 cup of melted butter, 1/2 cup of brown sugar, and 1/4 cup of granulated sugar until well combined.
- Add 2 eggs and 1 teaspoon of vanilla extract to the butter and sugar mixture, and mix until smooth.
- Stir in the grated carrots, chopped nuts (if using), and raisins (if using).
- Gradually add the dry ingredients to the wet ingredients, and mix until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the carrot cake bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
