Ingredients
- 2 lbs beef stew meat, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 tomatoes, chopped
- 2 cups beef broth
- 1/4 cup tomato paste
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp oregano
- Salt and pepper to taste
- 2 tbsp all-purpose flour
- 1/4 cup water
- Fresh cilantro for garnish
Instructions
- In a large pot, heat 2 tbsp of vegetable oil over medium-high heat.
- Add the beef stew meat and brown on all sides, about 5 minutes.
- Add the chopped onion, garlic, bell pepper, and jalapeno pepper to the pot. Cook for 5 minutes until the vegetables are softened.
- Stir in the chopped tomatoes, beef broth, tomato paste, cumin, chili powder, paprika, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
- In a small bowl, mix the all-purpose flour with water to make a slurry. Stir the slurry into the stew to thicken the sauce.
- Simmer for an additional 10 minutes until the sauce has thickened.
- Taste and adjust seasoning if necessary.
- Garnish with fresh cilantro before serving.
- Serve the carne guisada with warm tortillas or rice. Enjoy!
