Ingredients
- 4 large potatoes, diced into small cubes
- 1 large onion, thinly sliced
- 6 slices of bacon, chopped
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of paprika
- 1/4 teaspoon of garlic powder
- 2 tablespoons of chopped fresh parsley
Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
- Add the olive oil to the skillet with the bacon grease. Add the diced potatoes and cook over medium heat, stirring occasionally, until the potatoes are golden and crispy, about 15-20 minutes.
- While the potatoes are cooking, in a separate skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the thinly sliced onions and cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes.
- Once the potatoes are crispy and golden, add the caramelized onions and crispy bacon to the skillet. Season with salt, black pepper, paprika, and garlic powder. Stir to combine and cook for an additional 5 minutes to allow the flavors to meld.
- Sprinkle the chopped fresh parsley over the home fries before serving. Enjoy!
