Caramelized Onion and Spinach Frittata

Ingredients
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1 teaspoon balsamic vinegar
- 2 cups fresh spinach, chopped
- 8 large eggs
- 1/2 cup milk
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for about 10 minutes until they start to caramelize.
- Sprinkle 1 teaspoon of sugar over the onions and continue to cook for another 5-7 minutes, stirring occasionally, until the onions are golden brown and caramelized. Stir in 1 teaspoon of balsamic vinegar and cook for an additional 2 minutes. Remove from heat and set aside.
- Preheat the broiler in your oven.
- In a large bowl, whisk together 8 large eggs, 1/2 cup of milk, and 1/2 cup of grated Parmesan cheese. Season with salt and pepper to taste. Stir in the chopped spinach and caramelized onions.
- Heat an oven-safe skillet over medium heat and add a drizzle of olive oil. Pour the egg mixture into the skillet and cook for 5-7 minutes, or until the edges are set but the center is still slightly runny.
- Place the skillet under the broiler and broil for 3-5 minutes, or until the frittata is set and golden brown on top.
- Remove from the oven and let it cool for a few minutes before slicing and serving. Enjoy!
