  • Using a sharp knife, make a pocket in each chicken breast by slicing horizontally through the middle, being careful not to cut all the way through.
  • Season the inside of each chicken breast with salt and pepper.
  • Stuff each chicken breast with 1/4 cup of cherry tomatoes, 2 oz of mozzarella, and a few basil leaves.
  • Wrap 2 slices of prosciutto around each stuffed chicken breast, ensuring the filling is secure.
  • In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the stuffed and wrapped chicken breasts to the skillet and cook for 3-4 minutes on each side, or until the prosciutto is crispy and the chicken is golden brown.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
